I believe that in a yoga lifestyle you can also really enjoy something sweet. However, I like to do this in a way that is less harmful for the body and at the same time provides healthy nutrients. So that your sweet moment becomes one of carefree enjoyment.
In the spring, when I see the rhubarb nice and fresh everywhere, I love to make this rhubarb strawberry crumble. Save this recipe and put the ingredients on your shopping list to make this easy rhubarb strawberry crumble yourself. Organic ingredients (4 servings)
Filling:
- 4 stalks of rhubarb
- 300 grams (frozen) strawberries
- 50 ml of water
- 2 tablespoons coconut blossom sugar (or 2 tablespoons maple syrup or 5 dates)
- 1 teaspoon Ceylon cinnamon
- ½ teaspoon vanilla powder (unsweetened)
Crumble:
- 100 grams of oatmeal
- 100 grams of almond flour
- 1 to 2 tablespoons of maple syrup (depending on how sweet you like it)
- 4 tablespoons of extra virgin coconut oil (or ghee)
- pinch of Himalayan salt
Preparation
- Preheat the oven to 180 ºC
- Cut off (and discard) the ends of the rhubarb. Cut the rhubarb stems into pieces.
- Place the rhubarb and water in a pan and bring to the boil. Reduce the heat and let it simmer for 10 minutes. Stir regularly.
- In the meantime, make a crumble dough by mixing the ingredients in a mixing bowl: oatmeal, almond flour, maple syrup, coconut oil (or ghee) and Himalayan salt. You can do this with a tablespoon or by hand.
- Add the strawberry and coconut blossom sugar (or alternative) to the rhubarb and cook for 1 minute. Taste to check if it is sweet enough for you and if necessary add more coconut blossom sugar, maple syrup or dates.
- Grease an oven dish with a little bit of coconut oil or ghee.
- Place the rhubarb strawberry mixture in the baking dish. Top off with the crumble dough.
- Bake the rhubarb strawberry crumble in the oven for about 30 to 35 minutes until the top is golden brown.
- Let the rhubarb strawberry crumble cool for a few minutes outside the oven before dividing it among your favorite bowls and serving.
