My boyfriend loves to eat apple pie. But… I don’t use eggs and refined sugar in my dishes... So I started experimenting to make guilt-free apple tarts, resulting in this recipe. These little apple tarts have been approved by the both of us. They are delicious with a cup of tea or present them as dessert.
I hope you enjoy these apple tarts: from the making to sharing and eating them.
Organic ingredients (for 6 mini appel tarts)
Bottom:
- 100 gram mixed nuts (for example pecan, hazel and cashew)
- 40 gram oatmeal
- 4 to 5 fresh medjoul dates (without pit)
- 15 gram coconut oil
- 1 teaspoon cinnamon
- 1/2 teaspoon vanilla powder (unsweetened)
- pinch of himalaya salt
Filling:
- 1/2 apple (or 1 mini apple)
- 40 gram raisins
- 1 teaspoon cinnamon
Other:
- Muffin tin (6 molds greased with a little coconut oil)
- Mixer (chopper, food processor, or (hand)blender
Preparation
- Soak age raisins in warm water (for minimal 10 minutes).
- Preheat the oven to 180ºC.
- Chop or grind the nuts a little bit (for example with chopper).
- Mix the nuts, oatmeal, dates, coconut oil, vanilla powder, 1 teaspoon of cinnamon and the pinch of Himalaya salt in the mixer until it becomes a sticky substance.
- Divide the dough into 6 molds: cover the bottom and edges to make cups.
- Peel the apple and cut the apple into small pieces (smaller than with regular apple pie as it is put in the muffin tins).
- Mix the apple pieces, drained raisins and cinnamon with a spoon.
- Fill the muffin tins with the apple filling.
- Bake the mini apple tarts for +/- 20 minutes in the oven.
- Let the apple tarts cool down before removing them from the muffin tin.
